Ingredients
Scale
- 1 cup + 2 tbsp mashed ripe bananas (about 3–4 bananas)
- 2 cups self-rising flour (or substitute: 2 cups all-purpose flour + 1 tbsp baking powder + ½ tsp salt)
- ½ cup milk of choice (dairy or non-dairy)
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×4-inch loaf pan or line it with parchment paper.
- Mash the bananas in a large bowl until smooth.
- Add the milk and stir until well combined.
- Gradually mix in the self-rising flour, stirring gently until just combined. Avoid overmixing.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Slice and enjoy as-is or with your favorite spreads.
Notes
- For extra sweetness, add 2–3 tbsp honey, maple syrup, or chocolate chips.
- Make it dairy-free by using almond, oat, or coconut milk.
- Store at room temperature for 3 days, in the fridge for up to 1 week, or freeze for up to 3 months.
- If using all-purpose flour instead of self-rising, add baking powder and salt as listed above.
