A simple and delicious banana bread recipe made with just 2 bananas. Perfectly moist, easy to make, and customizable with your favorite add-ins like nuts or chocolate.

- 2 medium-sized ripe bananas, mashed
- 1 ½ cups all-purpose flour
- ½ to ¾ cup granulated sugar (adjust to taste)
- ⅓ cup melted butter (or substitute with oil)
- 2 large eggs
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- Optional: ½ cup chopped nuts, chocolate chips, or dried fruits
Instructions
- Preheat oven to 350°F (175°C) and grease an 8×4-inch loaf pan.
- In a large bowl, mash the bananas until smooth. Add melted butter, sugar, eggs, and vanilla extract, and mix well.
- In a separate bowl, sift together the flour, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients until just combined. Do not overmix.
- If using nuts, chocolate chips, or dried fruits, fold them into the batter.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- For extra moist bread, add a tablespoon of sour cream or yogurt to the batter.
- Substitute butter with coconut oil for a dairy-free version.
- To ripen bananas quickly, bake them at 300°F for 10–15 minutes.
