For the Cake:
- 3 cups all-purpose flour
- 2 ½ tsp baking powder
- ½ tsp salt
- 1 cup unsalted butter (room temperature)
- 2 ½ cups granulated sugar
- 4 large eggs
- 1 tbsp vanilla extract
- 1 cup whole milk
- ½ cup sour cream
For the Buttercream Frosting:
- 2 cups unsalted butter (room temperature)
- 6 cups powdered sugar
- 2 tsp vanilla extract
- 4 tbsp heavy cream
- Pink food coloring (gel-based for vibrant color)
For Decoration:
- 1 Barbie doll (wrapped in plastic wrap)
- Edible pearls, sprinkles, or glitter
- Additional piping bags and star piping tips
Instructions
Step 1: Bake the Cake Layers
- Preheat the oven to 350°F (175°C). Grease and line three 8-inch round cake pans or one dome-shaped pan.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat butter and sugar until light and fluffy (about 3-4 minutes).
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Alternate adding dry ingredients and milk/sour cream mixture, beginning and ending with dry ingredients. Mix until just combined.
- Pour the batter evenly into the prepared pans and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Step 2: Prepare the Buttercream Frosting
- Beat butter until creamy and smooth. Gradually add powdered sugar, mixing on low speed.
- Stir in vanilla extract and heavy cream, then beat for 2–3 minutes until light and fluffy.
- Divide and tint the frosting with pink food coloring as desired.
Step 3: Assemble the Barbie Cake
- Stack the cooled cake layers with frosting in between. If using round cakes, carve the layers into a dress shape.
- Cut a hole in the center of the cake and insert the Barbie doll (wrapped in plastic wrap).
- Apply a crumb coat (thin frosting layer) and chill for 20 minutes.
Step 4: Decorate the Dress
- Use a star piping tip to create rosettes or ruffles on the cake dress.
- Add edible pearls, glitter, or fondant details for extra elegance.
- Chill the cake for at least 30 minutes before serving.
Notes
- Use cake dowels for extra stability if transporting the cake.
- For an ombre effect, tint frosting in different shades and layer them from dark to light.
- Substitute buttercream with whipped cream frosting for a lighter texture.
- Store leftovers in the refrigerator for up to 3 days in an airtight container.
