Ingredients
Scale
- 3 ripe bananas, mashed
- 1 cup fresh or frozen blackberries (lightly coated in flour)
- 2 cups all-purpose or whole wheat flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon cinnamon (optional, for extra warmth)
- ½ cup sugar, honey, or maple syrup
- 2 eggs (or flax eggs for a vegan option)
- ⅓ cup melted butter or vegetable oil
- 1 teaspoon vanilla extract
- ½ cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- In a bowl, whisk together flour, baking soda, salt, and cinnamon.
- In another bowl, mash bananas and mix with sugar, eggs, melted butter (or oil), and vanilla extract.
- Gradually fold dry ingredients into wet ingredients, mixing until just combined.
- Gently fold in blackberries and optional add-ins (nuts or chocolate chips).
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and enjoy!
Notes
- For extra moisture, replace some butter or oil with Greek yogurt or applesauce.
- Frozen blackberries work well, but do not thaw them before adding to the batter.
- For a sweeter loaf, increase the sugar slightly or add chocolate chips.
- Store at room temperature for 3 days, in the fridge for up to a week, or freeze for up to 3 months.
