  • Author: Maria
  • Total Time: 1 hour 5 minutes
  • Yield: 1 loaf (8-10 slices) 1x
  • Diet: Vegan

Description

This blackberry banana bread is a moist, flavorful twist on a classic favorite. The sweetness of ripe bananas pairs perfectly with the juicy, tart bursts of blackberries, creating a deliciously balanced loaf. Packed with fiber, antioxidants, and natural sweetness, this bread is both nutritious and satisfying. Enjoy it as a breakfast treat, afternoon snack, or wholesome dessert!

Ingredients

Scale
  • 3 ripe bananas, mashed
  • 1 cup fresh or frozen blackberries (lightly coated in flour)
  • 2 cups all-purpose or whole wheat flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon (optional, for extra warmth)
  • ½ cup sugar, honey, or maple syrup
  • 2 eggs (or flax eggs for a vegan option)
  • ⅓ cup melted butter or vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup chopped nuts or chocolate chips (optional)

Instructions

  • Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  • In a bowl, whisk together flour, baking soda, salt, and cinnamon.
  • In another bowl, mash bananas and mix with sugar, eggs, melted butter (or oil), and vanilla extract.
  • Gradually fold dry ingredients into wet ingredients, mixing until just combined.
  • Gently fold in blackberries and optional add-ins (nuts or chocolate chips).
  • Pour batter into the prepared loaf pan and smooth the top.
  • Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Slice and enjoy!

Notes

  • For extra moisture, replace some butter or oil with Greek yogurt or applesauce.
  • Frozen blackberries work well, but do not thaw them before adding to the batter.
  • For a sweeter loaf, increase the sugar slightly or add chocolate chips.
  • Store at room temperature for 3 days, in the fridge for up to a week, or freeze for up to 3 months.
