This breakfast burrito casserole combines all the delicious flavors of a classic burrito into a simple, layered, oven-baked dish. Perfect for busy mornings, meal prep, or brunch gatherings, this recipe is versatile, easy to make, and customizable to suit any dietary preference.

Ingredients

Scale
  • 8 large eggs
  • 6 flour tortillas (or corn tortillas for gluten-free)
  • 1 lb cooked sausage or bacon, crumbled (or plant-based alternative)
  • 2 cups shredded cheddar or Monterey Jack cheese
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup diced tomatoes (drained if juicy)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Optional toppings: sliced avocado, salsa, sour cream, chopped cilantro

Instructions

  • Preheat your oven to 350°F (175°C).
  • Crack and whisk eggs in a bowl, adding salt and pepper to taste.
  • Cook your chosen protein (e.g., sausage or bacon) and set aside.
  • Grease a 9×13-inch baking dish and place a layer of tortillas at the bottom.
  • Spread a layer of scrambled eggs, followed by cooked protein, veggies, and shredded cheese.
  • Repeat layers, ending with a generous layer of cheese on top.
  • Bake for 30–35 minutes until the cheese is golden and bubbly.
  • Allow to cool for 5–10 minutes before slicing. Serve with optional toppings like salsa, avocado, or sour cream.

Notes

  • To prevent sogginess, sauté vegetables before layering them in the casserole.
  • Make ahead: Assemble the casserole, cover, and refrigerate overnight. Bake fresh the next morning.
  • For a vegetarian version, replace meat with black beans or tofu.
  • Store leftovers in an airtight container in the fridge for up to 4 days or freeze portions for up to 3 months.
