Description

Brookie bars with brownie mix are the ultimate dessert fusion, combining fudgy brownies with chewy chocolate chip cookies in one delicious treat. This quick and easy recipe uses a boxed brownie mix for convenience while delivering a rich, homemade flavor. Perfect for parties, bake sales, or satisfying a sweet craving, these bars are a must-try for chocolate lovers.

Ingredients

Scale

Brownie Layer

  • 1 box brownie mix (Ghirardelli, Betty Crocker, or Duncan Hines)
  • Ingredients required by the mix (typically eggs, oil, and water)

Cookie Layer

  • 12 tbsp butter, melted and slightly cooled
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 1 large egg + 1 egg yolk
  • 2 tsp vanilla extract
  • 2 cups + 2 tbsp all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 1½ cups semi-sweet chocolate chips

Instructions

  • Preheat the oven to 325°F (163°C). Line a 9×13-inch baking dish with parchment paper or grease it with non-stick spray.
  • Prepare the brownie layer by following the instructions on the brownie mix box. Pour the batter into the prepared baking dish and spread it evenly.
  • Make the cookie dough: In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
  • Add the egg, egg yolk, and vanilla extract, mixing until well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet ingredients, stirring until just combined.
  • Fold in the chocolate chips and mix until evenly distributed.
  • Drop spoonfuls of cookie dough over the brownie batter. Use a spatula to gently spread it out without fully mixing the layers.
  • Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
  • Allow the brookies to cool for at least 1 hour before slicing into squares.

Notes

  • For a fudgier texture, slightly underbake the brookies and let them set as they cool.
  • If using a larger brownie mix (for 9×13 pans), adjust the baking time as needed.
  • Store brookies in an airtight container at room temperature for up to 4 days, or refrigerate for up to a week.
  • To freeze, wrap individually and store in a freezer-safe container for up to 3 months.
