  • 2 large eggs, beaten

  • ¼ cup chopped green onions (optional)
  • Salt and pepper, to taste
  • Non-stick cooking spray or butter, for greasing

Instructions

  • Preheat the oven to 400°F (200°C). Grease a muffin tin with non-stick spray or butter.
  • In a mixing bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, eggs, sour cream, green onions (optional), salt, and pepper. Mix well until smooth.
  • Scoop the mixture evenly into the prepared muffin tin, filling each cup about ¾ full. Optionally, sprinkle extra Parmesan or breadcrumbs on top for added crunch.
  • Bake for 20-25 minutes, or until the tops are golden brown and crispy.
  • Remove from the oven and let the puffs cool for 5 minutes before carefully removing them from the tin. Serve warm with your favorite dips or as a side dish.
