Description

A classic French dessert, Cherry Clafoutis combines the tart sweetness of cherries with a rich, custard-like batter. Perfect for showcasing the vibrant flavors of cherry season, this simple yet elegant dish is a must-try for summer gatherings or as a delightful treat anytime.

Ingredients

Scale
  • 1 pound fresh cherries, pitted
  • 3 large eggs
  • ½ cup granulated sugar
  • 1 cup whole milk
  • ½ cup all-purpose flour
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Powdered sugar (optional, for dusting)

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9-inch baking dish with butter or non-stick spray.
  • Spread the pitted cherries evenly across the bottom of the prepared dish.
  • In a mixing bowl, whisk together the eggs and sugar until pale and frothy. Add milk, vanilla extract, salt, and flour. Whisk until the batter is smooth and free of lumps.
  • Pour the batter over the cherries in the dish.
  • Bake for 35-40 minutes, or until the top is golden brown and the center is set.
  • Remove from the oven and allow to cool slightly. Dust with powdered sugar before serving, if desired.

Notes

  • For added flavor, mix a teaspoon of almond extract into the batter.
  • Use tart cherries for a more balanced dessert or sweet cherries for a richer flavor.
  • This dish is best served warm but can also be enjoyed at room temperature.
