For the Crust:
- 1 ½ cups all-purpose flour

- 3 cups pitted cherries (fresh or frozen, thawed & drained)
- ½ cup granulated sugar
- 1 tbsp cornstarch
- 1 tsp vanilla extract
- ½ tsp almond extract (optional)
- 1 tbsp lemon juice
- 1 tbsp butter, melted
For the Topping (Optional):
- 1 egg, beaten (for egg wash)
- 2 tbsp sliced almonds (for garnish)
- Powdered sugar (for dusting)
Instructions
1. Prepare the Dough
- In a bowl, combine flour, sugar, and salt.
- Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Add the egg yolk and cold water, mixing until the dough comes together.
- Form into a disc, wrap in plastic, and chill for 30 minutes.
2. Make the Cherry Filling
- In a medium bowl, mix cherries, sugar, cornstarch, vanilla, almond extract, and lemon juice. Let sit for 15 minutes.
3. Assemble the Tart
- Preheat oven to 375°F (190°C). Roll out the chilled dough and press it into a 9-inch tart pan. Trim the edges.
- Pour the cherry mixture into the tart shell. Drizzle melted butter over the filling.
- Brush the crust edges with egg wash and sprinkle with sliced almonds.
4. Bake & Serve
- Bake for 40-45 minutes, or until the crust is golden brown and the filling is bubbling.
- Let cool for at least 1 hour before slicing. Dust with powdered sugar and serve!
Notes
- For a thicker filling, add an extra ½ tbsp of cornstarch.
- For a rustic look, skip the tart pan and fold the edges over the filling (galette-style).
- Use frozen cherries? Thaw and drain them completely before using to prevent excess liquid.
