For the Crust:

  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • ½ tsp almond extract (optional)
  • 1 tbsp lemon juice
  • 1 tbsp butter, melted

For the Topping (Optional):

  • 1 egg, beaten (for egg wash)
  • 2 tbsp sliced almonds (for garnish)
  • Powdered sugar (for dusting)

Instructions

1. Prepare the Dough

  1. In a bowl, combine flour, sugar, and salt.
  2. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  3. Add the egg yolk and cold water, mixing until the dough comes together.
  4. Form into a disc, wrap in plastic, and chill for 30 minutes.

2. Make the Cherry Filling

  1. In a medium bowl, mix cherries, sugar, cornstarch, vanilla, almond extract, and lemon juice. Let sit for 15 minutes.

3. Assemble the Tart

  1. Preheat oven to 375°F (190°C). Roll out the chilled dough and press it into a 9-inch tart pan. Trim the edges.
  2. Pour the cherry mixture into the tart shell. Drizzle melted butter over the filling.
  3. Brush the crust edges with egg wash and sprinkle with sliced almonds.

4. Bake & Serve

  1. Bake for 40-45 minutes, or until the crust is golden brown and the filling is bubbling.
  2. Let cool for at least 1 hour before slicing. Dust with powdered sugar and serve!

  • For a thicker filling, add an extra ½ tbsp of cornstarch.
