  • 2 cloves garlic, minced

  • 1 teaspoon dried basil

  • 1 cup fresh mozzarella, sliced or shredded

  • Fresh basil leaves for garnish

Instructions

1. Prepare the Chicken:

  1. Preheat oven to 375°F (190°C).
  2. Season chicken with salt, pepper, garlic powder, and oregano.
  3. Dredge each chicken breast in flour, dip in beaten eggs, then coat with a mixture of breadcrumbs and Parmesan cheese.
  4. Let the coated chicken rest for 5 minutes to help the breading set.

2. Cook the Chicken:

  1. Heat olive oil in a skillet over medium-high heat.
  2. Fry chicken for 3–4 minutes per side until golden brown. Transfer to a paper towel-lined plate.

3. Prepare the Sauce:

  1. In a saucepan, heat olive oil and sauté garlic for 1 minute.
  2. Add marinara sauce, basil, and red pepper flakes, simmer for 10 minutes.

4. Assemble & Bake:

  1. Spread 1 cup of marinara sauce in a baking dish.
  2. Place the fried chicken on top, then spoon additional sauce over each piece.
  3. Sprinkle with mozzarella and Parmesan.
  4. Bake for 15 minutes, then broil for 2–3 minutes until cheese is bubbly and golden.

5. Serve & Enjoy:

  1. Garnish with fresh basil and serve with roasted vegetables or pasta.

  • For a healthier version, bake the breaded chicken at 400°F (200°C) for 20–25 minutes instead of frying.
