- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/3 cup sun-dried tomatoes, chopped
- 1 teaspoon dried oregano
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Season the chicken breasts with salt, pepper, and a sprinkle of oregano.
- Heat olive oil in a large skillet over medium heat. Sear chicken breasts until golden brown on both sides, about 4-5 minutes per side. Remove and set aside.
- In the same skillet, sauté garlic until fragrant, about 1 minute.
- Add chicken broth and sun-dried tomatoes, scraping any browned bits from the bottom of the pan. Simmer for 2-3 minutes.
- Stir in heavy cream and Parmesan cheese. Mix until smooth and creamy.
- Return chicken breasts to the skillet, spoon sauce over the top, and simmer for 8-10 minutes until the chicken is cooked through.
- Garnish with fresh basil and serve with pasta, rice, or a side of vegetables.
Notes
- For extra flavor, marinate the chicken in olive oil, garlic, and oregano for 30 minutes before cooking.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
