- 1 cup julienned carrots
- 1/2 cup chopped bamboo shoots
- 1/2 cup chopped mushrooms (shiitake or wood ear)
- 3 green onions, finely chopped
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- 2 tbsp soy sauce
- 1 tsp sugar
- 1/4 tsp MSG (optional)
- 1 egg (beaten, for sealing)
- 12–15 egg roll wrappers
- Vegetable oil (for frying)
Instructions
- Prepare the Filling:
- Heat 1 tbsp of vegetable oil in a wok or skillet over medium-high heat.
- Sauté garlic and ginger until fragrant. Add ground pork and cook until browned.
- Stir in cabbage, carrots, bamboo shoots, and mushrooms. Cook for 3–5 minutes until vegetables soften.
- Season with soy sauce, sugar, and MSG (optional). Remove from heat and let the mixture cool completely.
- Assemble the Egg Rolls:
- Place a wrapper on a flat surface, diamond-shaped. Add 2–3 tablespoons of filling near the bottom corner.
- Fold the bottom corner over the filling, then fold in the sides tightly. Roll up firmly, sealing the top edge with beaten egg. Repeat for all wrappers.
- Fry the Egg Rolls:
- Heat vegetable oil in a deep pan to 350°F (175°C).
- Fry the egg rolls in small batches for 5–7 minutes until golden brown. Turn occasionally for even cooking.
- Drain on paper towels and serve hot with your favorite dipping sauce.
Notes
- For healthier options, bake the egg rolls at 400°F (200°C) for 20–25 minutes or air fry at 375°F (190°C) for 12–15 minutes.
- You can freeze uncooked egg rolls for up to 3 months. Fry directly from frozen, adding 1–2 extra minutes to the cooking time.
- Substitute pork with shrimp, chicken, or tofu for variations.
