Ingredients

Scale
  • 1 lb ground pork
  • 2 cups shredded cabbage
  • 1 cup julienned carrots
  • 1/2 cup chopped bamboo shoots
  • 1/2 cup chopped mushrooms (shiitake or wood ear)
  • 3 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 2 tbsp soy sauce
  • 1 tsp sugar
  • 1/4 tsp MSG (optional)
  • 1 egg (beaten, for sealing)
  • 1215 egg roll wrappers
  • Vegetable oil (for frying)

Instructions

  1. Prepare the Filling:
    • Heat 1 tbsp of vegetable oil in a wok or skillet over medium-high heat.
    • Sauté garlic and ginger until fragrant. Add ground pork and cook until browned.
    • Stir in cabbage, carrots, bamboo shoots, and mushrooms. Cook for 3–5 minutes until vegetables soften.
    • Season with soy sauce, sugar, and MSG (optional). Remove from heat and let the mixture cool completely.
  2. Assemble the Egg Rolls:
    • Place a wrapper on a flat surface, diamond-shaped. Add 2–3 tablespoons of filling near the bottom corner.
    • Fold the bottom corner over the filling, then fold in the sides tightly. Roll up firmly, sealing the top edge with beaten egg. Repeat for all wrappers.
  3. Fry the Egg Rolls:
    • Heat vegetable oil in a deep pan to 350°F (175°C).
    • Fry the egg rolls in small batches for 5–7 minutes until golden brown. Turn occasionally for even cooking.
    • Drain on paper towels and serve hot with your favorite dipping sauce.

Notes

  • For healthier options, bake the egg rolls at 400°F (200°C) for 20–25 minutes or air fry at 375°F (190°C) for 12–15 minutes.
  • You can freeze uncooked egg rolls for up to 3 months. Fry directly from frozen, adding 1–2 extra minutes to the cooking time.
  • Substitute pork with shrimp, chicken, or tofu for variations.
