Ingredients

Scale
  • For the Fish
    • 4 wild-caught white fish filets (cod, haddock, or pollock)
    • 1 cup all-purpose flour
    • 1/2 cup cornstarch
    • 1 tablespoon paprika
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon cayenne pepper (optional for extra spice)
    • 1 teaspoon salt
    • 1 teaspoon black pepper
    • 1 cup cold sparkling water
    • Vegetable oil (for frying)
  • For the Toppings
    • 4 brioche buns, lightly toasted
    • 8 dill pickle slices
    • 1/2 cup tartar sauce

Instructions

  • Prepare the Batter
In a large mixing bowl, combine the flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Gradually whisk in the cold sparkling water until smooth.
  • Heat the Oil
Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C).
  • Coat and Fry the Fish
Pat the fish filets dry and coat them in the batter. Gently place the filets into the hot oil and fry for 3-4 minutes on each side until golden brown and crispy. Remove and drain on a wire rack or paper towels.
  • Assemble the Sandwich
Spread tartar sauce on the bottom half of each brioche bun. Add two pickle slices and a crispy fish filet. Top with the other half of the bun.
  • Serve
Serve immediately with your favorite sides, like fries or coleslaw.

Notes

  • For extra crunch, double-dip the fish filets in the batter before frying.
  • Substitute mayonnaise or spicy remoulade for tartar sauce if preferred.
  • Use an air fryer for a healthier cooking method (cook at 375°F for 12-15 minutes, flipping halfway through).
