Ingredients
Scale
- For the Fish
- 4 wild-caught white fish filets (cod, haddock, or pollock)
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cayenne pepper (optional for extra spice)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup cold sparkling water
- Vegetable oil (for frying)
- For the Toppings
- 4 brioche buns, lightly toasted
- 8 dill pickle slices
- 1/2 cup tartar sauce
Instructions
- Prepare the Batter
In a large mixing bowl, combine the flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Gradually whisk in the cold sparkling water until smooth. - Heat the Oil
Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C). - Coat and Fry the Fish
Pat the fish filets dry and coat them in the batter. Gently place the filets into the hot oil and fry for 3-4 minutes on each side until golden brown and crispy. Remove and drain on a wire rack or paper towels. - Assemble the Sandwich
Spread tartar sauce on the bottom half of each brioche bun. Add two pickle slices and a crispy fish filet. Top with the other half of the bun. - Serve
Serve immediately with your favorite sides, like fries or coleslaw.
Notes
- For extra crunch, double-dip the fish filets in the batter before frying.
- Substitute mayonnaise or spicy remoulade for tartar sauce if preferred.
- Use an air fryer for a healthier cooking method (cook at 375°F for 12-15 minutes, flipping halfway through).
