Ingredients

  • 4 rockfish fillets (about 6 oz each)
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 lemon, sliced
  • Salt and black pepper, to taste
  • Fresh parsley for garnish

Instructions

  • Pat the rockfish fillets dry with a paper towel and season both sides with salt and black pepper.
  • Heat olive oil in a large skillet over medium heat.
  • Place the fillets skin-side down and cook for 3–4 minutes until the skin is crispy.
  • Flip the fillets carefully and add butter and minced garlic to the pan.
  • Spoon the melted butter over the fish as it cooks for another 2–3 minutes, or until the fish is opaque and flakes easily.
  • Squeeze fresh lemon juice over the fillets and garnish with parsley before serving.

Notes

  • For extra flavor, marinate the fish for 15 minutes in a mixture of olive oil, garlic, and lemon juice.
