Description
Fluffy, golden pancakes made with simple ingredients for a classic, homemade breakfast. Light and airy on the inside with a slightly crispy edge, these pancakes are perfect with butter, maple syrup, or fresh fruit.
Ingredients
Scale
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 2 large eggs
- 1 ½ cups milk (whole or buttermilk)
- 3 tablespoons melted butter (plus extra for cooking)
- 1 teaspoon vanilla extract (optional)
Instructions
- Prepare the batter – In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Mix wet ingredients – In a separate bowl, beat the eggs, then add milk and melted butter. Stir until combined.
- Combine – Gently fold the wet ingredients into the dry ingredients. Do not overmix; a few lumps are okay. Let the batter rest for 5–10 minutes.
- Cook the pancakes – Heat a non-stick skillet or griddle over medium heat and lightly grease with butter. Pour ¼ cup of batter for each pancake.
- Flip and cook – When bubbles form on the surface (about 2–3 minutes), flip and cook for another 1–2 minutes until golden brown.
- Serve warm – Enjoy with maple syrup, fresh fruit, or your favorite toppings!
Notes
- For extra fluffy pancakes, use buttermilk instead of regular milk.
- To make healthier pancakes, swap half the flour for whole wheat flour.
- Leftovers can be stored in the fridge for 3–4 days or frozen for up to 2 months.
