Ingredients
Scale
- 1 (3 lb) beef brisket, trimmed of fat
- Salt and pepper, to taste
- 1 medium onion, thinly sliced
- 1 (12 oz) can light beer (like lager or pilsner)
- 1 (12 oz) bottle tomato-based chili sauce
- ¾ cup packed brown sugar
Instructions
- Preheat your oven to 325°F (165°C).
- Season the brisket generously on all sides with salt and pepper. Place it in a large glass baking dish.
- Layer the sliced onion over the brisket.
- In a medium bowl, stir together the beer, chili sauce, and brown sugar. Pour the mixture over the brisket and onions.
- Cover the dish tightly with aluminum foil and bake for 3 hours.
- Remove foil and bake for an additional 30 minutes to let the sauce thicken and caramelize.
- Let the brisket rest for about 10 minutes, then slice it against the grain. Return the slices to the dish and spoon the sauce over top.
- Reheat briefly in the oven if desired, then serve and enjoy!
Notes
- No beer? Sub it with beef broth or even cola for a fun twist.
- Make-ahead magic: Brisket actually tastes better the next day—hello, meal prep win.
- Slice it right: Always cut against the grain for tender, not chewy, slices.
- Leftovers? Try them in sandwiches, tacos, or on top of mashed potatoes.
- Want it smokier? Add a teaspoon of smoked paprika to the sauce mix.
