- 1.5 lbs bone-in chicken pieces (thighs, drumsticks, or whole sections)
- 8 cups water or chicken stock
- 2 medium carrots, peeled and sliced
- 2 medium potatoes, peeled and cubed
- 2 celery stalks, chopped
- 1 small onion, diced
- 2 garlic cloves, minced
- 2 bay leaves
- 1 tbsp chicken bouillon (optional)
- 1 tsp dried oregano
- ½ cup fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper, to taste
- Optional: corn, zucchini, or plantains
Instructions
- Prepare the Chicken: Rinse the chicken pieces and season with salt, pepper, and garlic powder.
- Make the Broth: In a large pot, bring water or chicken stock to a boil. Add the chicken, bay leaves, and minced garlic. Reduce heat to simmer for 30 minutes.
- Add Vegetables: Stir in carrots, potatoes, celery, and onion. Let simmer for another 20 minutes or until the vegetables are tender.
- Season the Soup: Add oregano, chicken bouillon (if using), and fresh cilantro. Adjust salt and pepper to taste.
- Finish and Serve: Remove from heat, add lime juice, and serve hot with tortillas or crusty bread.
