- 1 cup margarine (softened)
- ½ cup vegetable shortening (Crisco, softened)
- 5 large eggs (room temperature)
- 6 fluid ounces Sun Drop soda (room temperature)
- 1 tablespoon vanilla extract
- 1 tablespoon lemon extract
For the Citrus Glaze:
- 2 cups powdered sugar
- 2–3 tablespoons Sun Drop soda
- 1 teaspoon fresh lemon juice
- Optional garnish: lemon zest or orange slices
Instructions
- Preheat: Set oven to 325°F (165°C). Grease and flour a Bundt pan.
- Cream Fats and Sugar: In a bowl, mix margarine and shortening until creamy. Slowly add sugar until fluffy.
- Add Eggs: Mix in eggs one at a time until smooth.
- Alternate Flour and Soda: Add flour and Sun Drop soda alternately, starting and ending with flour. Mix gently.
- Flavorings: Stir in vanilla and lemon extracts.
- Bake: Pour batter into prepared pan. Bake 60–75 minutes, until a toothpick comes out clean.
- Cool: Cool cake in pan 10–15 minutes, then turn onto wire rack to cool completely.
- Glaze: Mix powdered sugar, Sun Drop soda, and lemon juice. Drizzle over cooled cake. Garnish as desired.
